This recipe is quick, easy and packed with nutrients! I use ground bison, but you can sub with any ground meat. I buy my ground bison from The Honest Bison.
Bison and Greens Skillet

Serves: 4 servings
Ingredients
- 2 Cups Chopped Broccoli
- 2 Cups Chopped Asparagus
- 2 Cups Torn Lacinato Kale
- 1 Lb Ground Bison (Can sub ground beef or turkey if your prefer)
- 1 Onion, Diced
- 4 Cloves Garlic, Minced
- 1 Cup Fresh Chopped Parsley
- 1 Tbsp Oregano
- 2 TBSP Ghee
- 3-4 TBSP of Homemade Buffalo Sauce: Recipe Here
Instructions
- Melt ghee in skillet over medium heat
- Add onion and garlic and let cook for a few minutes, until onion is translucent
- Add ground bison (or other ground meat), broccoli, asparagus and parsley and cook for about 5-7 minutes or until meat is cooked all the way through.
- Add Kale and cook for another 2 minutes
- Remove from heat and serve. Drizzle with homemade buffalo sauce if desired.
