Ingredients
- 1 Whole Chicken
- 8 Large Carrots
- ¼ Onion
- 2-3 Cloves Garlic
- 1 Tsp Sea Salt
- 1 Tsp Paprika
- 1 Tsp Garlic Powder
- 1 Tsp Italian Seasoning
- 1 Tsp Thyme
Instructions
- Peel Carrots. Stack them to make a "rack" for the chicken inside of the crockpot.
- Combine all spices, including salt in a dish and set aside
- Cut onion in 4ths. Keep one fourth for your chicken and store the remainder (or use in another recipe)
- Cut 3 cloves from a garlic head and set aside
- Unwrap chicken and remove giblets. Stuff chicken with onion and garlic. Lay the chicken on the rack you created with the carrots
- Sprinkle chicken with spice mixture and cook on high for 4 hours
