Crockpot Rotisserie Chicken

Ingredients
  • 1 Whole Chicken
  • 8 Large Carrots
  • ¼ Onion
  • 2-3 Cloves Garlic
  • 1 Tsp Sea Salt
  • 1 Tsp Paprika
  • 1 Tsp Garlic Powder
  • 1 Tsp Italian Seasoning
  • 1 Tsp Thyme
Instructions
  1. Peel Carrots. Stack them to make a "rack" for the chicken inside of the crockpot.
  2. Combine all spices, including salt in a dish and set aside
  3. Cut onion in 4ths. Keep one fourth for your chicken and store the remainder (or use in another recipe)
  4. Cut 3 cloves from a garlic head and set aside
  5. Unwrap chicken and remove giblets. Stuff chicken with onion and garlic. Lay the chicken on the rack you created with the carrots
  6. Sprinkle chicken with spice mixture and cook on high for 4 hours
